Preheat oven to 375 degrees. Prepare chicken. On baking sheet cover chicken with 1/4 cup of Everglades Mopping Sauce and bake for 20 minutes or until completely cooked.
While chicken is cooking prepare other ingredients; slice red onion into very thin slices, chop cilantro and slice mozzarella cheese into thin slices
After chicken has cooked for 20 minutes and let cool. Slice chicken lengthwise. if you slice lengthwise you cut against the grain so the meat is much more tender and not grainy.
Turn oven up to 500 degrees. If using pizza stone place in oven and let stone heat for 30 minutes. If you do not have a stone, no biggie, just turn a baking sheet upside down and place on oven rack to preheat.
Prepare dough for pizza. When spreading dough out make sure that you place corn meal or parchment paper underneath to make sure pizza will slide easily from surface to surface.
Layer ingredients - remaining Everglades Mopping Sauce, crumbled mozzarella cheese, chunked chicken, and thinly sliced onions.
Carefully slide pizza on to try to transfer to pizza stone/tray. If you are not using parchment paper, add cornmeal to the tray that using as a transfer to keep pizza from sticking. Slide the pizza right onto the pizza stone or tray that has been preheating in oven (if using parchment paper just slide right into oven, paper will get dark but will not burn.)
Bake in oven for about 10 minutes or until bubbly. Remove from oven and add chopped cilantro. ENJOY!
