Pre heat oven to 375 degrees F. Mince Shallots and combine with olive oil in small pan. Heat on medium heat till shallots are translucent.
Wash potatoes, slice partially across the narrow width of the potato. Taking care not to slice through the potatoes fully.
Cut tops off garlic heads and slice lemon into 6 wedges
Arrange potatoes (slices up), lemon wedges, garlic heads, and thyme sprigs in cake pan. Spoon olive oil / shallot mixture evenly across potatoes and garlic. Sprinkle Everglades All Purpose seasoning across all ingredients.
Place in preheated oven and bake for one hour.
P.S. the roasted garlic is great to use on its own. Just squeeze out and use it in other recipes that call for garlic or even use it as a spread on bread. Either way you can't go wrong.
