3 chicken breast
6 pieces of bacon
1/2 teaspoon Everglades All Purpose Seasoning
1/3 cup Everglades Seasoning Mopping Sauce
1/2 cup monterey jack shredded cheese
I LOVE to cook bacon in the oven! No messy frying pan or greasy countertops or the splashes of the bacon grease. So, if you are willing to give the oven cooking a try start by spraying a baking sheet with cooking spray. Lay bacon on cooking sheet taking care to make sure the pieces are not touching. Put bacon in COLD oven DO NOT PREHEAT. Once baking sheet with bacon is in the oven turn oven on to 425 degrees F. For thick cut bacon cook time is around 14 minutes for my oven. Make sure for the last 3-4 minutes you watch the bacon carefully as ovens cook differently and the bacon cooks quickly in the last few minutes.
If you aren't feeling adventurous cook bacon however you feel comfortable.
Set oven temperature to 375 degrees F. Clean chicken breast, removing any excess fat. Place in cake pan sprinkle both sides of each breast with Everglades All Purpose Seasoning.
Bake for approximately 30 minutes or until chicken is cooked fully. Remove from oven. Layer 1/3 mopping sauce, two slices of cooked bacon, and 1/3 of cheese on each chicken breast.
Place back into oven to heat mopping sauce and melt cheese. Remove from oven when cheese is melted and ENJOY!
