Southwestern Salad

This recipe is one of my favorites, it can be as simple or as intricate as you want. When I do make the simple version of the salad the only recipe I really use is for the ranch because trust me it is worth it!!! 

 For the salad that is in the photo above, it uses a combination of 3 different recipes. Trust us it is worth it to make!! 

Shopping List (makes 2 large salads)

  • 2 hearts of romaine lettuce
  • 1 can black beans, drained and rinsed
  • 1/2 cup mexican blend cheese
  • 1 avocado
  • 1 small bag of frozen corn
  • 1 lime

Other items needed if you are making with the Chili Lime Chicken and Ranch Dressing

Chili Lime Chicken

  • __ chicken breast
  • __ Lime
  • __ Honey
  • __ Everglades Fish and Chicken Seasoning
  • __ Garlic

Ranch Dressing

  • __ Buttermilk
  • __ Mayonaise 
  • __ Buttermilk Ranch Dressing Mix
  • __ Everglades Seasoning Heat Dressing

If you are going with the Chili Lime Chicken and Ranch Dressing,  I recommend starting with the marinating of the Chicken then making the Ranch Dressing in the morning. Start by cooking the chicken about 30 minutes before you are wanting to start putting your salad together. 

If you are going with the simple version, no worries just start with the directions below. 

Start by chopping and rinsing the romaine lettuce.

Drain and rinse the black beans


Once black beans are rinsed start heating them over medium-high heat in skillet or use microwave starting with 30 seconds increments stirring each time. 

Layer the salad, lettuce on the bottom with the corn and avocado towards the sides. Place the heated black beans, cheese, and chicken in center. Then drizzle everything with ranch dressing.
